Lime (Lumbo) Lime or citrus aurantifolia comes from rutaceae, citrus family. They are usually small in size and harvested greed. Limes have an odor and sourness similar to lemon, but more refreshing and aromatic and used in making many warm dishes and cold drinks. Commonly grown in Asia and Central America, the fruit is also used in curries and in making pickles and chutneys. In Sun Island it is often served with grilled fish. You may also get fresh lime juice from any bar. Lime is served in all buffets.Maldivians like them squeezed while eating “garudhiya” ( tuna stock) and rice. Another favourite is “lonu Lumbo”, where ripe limes are put in salt water and sun-dried until its interior turns brown.
