Coconut (Dhivehi Ruh)
Coconut or cocos nucifera comes form the Arecaceae, palm family. It is a multi purpose tree. The seed tissue (endosperm) in its fruit is used fresh or dried, it has a pleasant, mild and nutty fragrance, with a hint of sweetness. The dry coconuts are scraped and used in maldivian cuisine often in short eats and as coconut milk. Also they are used to make coconut oil. The juice inside the young fruit ”Kurumba Fen” (coconut water ) is a delicious refresher in all tropics , in fact it is offered to you on arrival to Sun Island , to quench your thirst after a long journey. It’s the way we welcome in the Maldives! In 1985, Maldives declared it as the National Tree. Without waste all of it can be used. Its leaves are used for thatch, in roofing, branches and trunk as building material and its husk for rope and for brooms. The ladies use it’s leaves for making a eakle broom used for the daily sweeping of the roads and yards. You will see ladies from our neighborhood visiting and cleaning the island using them. On special festivals sometimes a huge fish ( Bodu Mas) is made out of these branches or is used for various decorations. Coconut shells are burned and used as fuel and sometimes used in hand irons for pressing. Enjoy favorite Asian recipes using coconut from our buffets.
